Traditional sake brewing began with sake breweries designed to promote natural ventilation and was a winter task when the optimal low-temperature environment for microorganisms was in place.
Ichinoya aims for sake that lives "in the present."
We want to read and understand the trends of the times, market trends, and people's preferences, and express them in the aroma and taste.
While utilizing the architectural structure of the sake brewery that has continued since the Meiji era,
we have introduced a temperature and humidity management system that enables brewing throughout the four seasons.
We have also equipped tanks with cooling devices so that we can delicately design the alcohol content.
The master brewer's sensibility in discerning the degree of fermentation, backed by solid techniques, and
a system that enables delicate temperature control,
create an environment where yeast and koji mold can thrive.
And the expression of sake that can only be made at Ichinoya continues.
